There was an online meeting of the steering committee of the project "Cultural heritage of the kitchen - promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne", which is being implemented as part of the Cross-Border Cooperation Program Poland-Belarus-Ukraine 2014-2020.

Representatives of the Department of Strategic Development and Investment (the Lead beneficiary of the project), the NGO "Agency for Sustainable Development of the City", and the Administration of the City of Lublin took part in the working meeting.

During the meeting, the current state of project implementation and further stages of its implementation, adapting to the conditions of the pandemic, were discussed.

According to Roman Shyrko, the deputy head of the Department of Strategic Development and Investment, we had to make a lot of effort to implement the project's activities in the conditions of the pandemic, reorienting most of the activities to the online format and at the same time achieve the desired effect of the project's promotion and its effectiveness.

During the festival of authentic cuisine "Matsyk", which took place in Rivne as part of the implementation of the project "Cultural heritage of the kitchen - promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne", the Department of Strategic Development and Investment presented one of the main beneficiaries of the project as products developed within the framework of this project.

Vsevolod Polishchuk, a well-known restaurant marketer who participated in the promotion of the "Galician cuisine" brand and the development of Lviv as the main gastro-tourism destination in Ukraine, was involved in the development of the Management Strategy for Strategic Development and Investments. In close cooperation with restaurateurs, historians, researchers and other interested persons, the expert determined the development potential and ways of popularizing the culinary heritage of Rivne (Rivne cuisine).

• Preserving the culinary heritage of the Rivne region and spreading awareness of its importance among the residents of the city and region is a key mission that any project in the field of gastronomy should carry.

The strategy indicates the right direction in which Rivne should move to popularize regional cuisine in the coming years, both at the national and international level. After all, regional cuisine is an integral part of the identification and genetic code of Ukrainians, in particular the people of Ukraine.

Today, June 29, 2021, an Agreement on cooperation in the field of gastronomic tourism (hereinafter referred to as the Agreement) was signed between the Lublin Commune and the Rivne City Territorial Community.

The signing of the agreement took place at the international gastronomic conference in Lublin, by the deputy mayor Igor Krechkevych.

The prerequisite for signing the Agreement was the conclusion of the Agreement on partnership between the cities of Rivne and Lublin, which was signed on October 1, 2013, and the joint implementation of the cross-border project "Cultural heritage of cuisine - promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne".

The Department of Strategic Development and Investment, as the lead beneficiary of the above-mentioned project, and the administration of the city of Lublin are responsible partners for signing the Agreement.

The agreement envisages cooperation in the field of tourism as a factor in preserving and deepening friendly relations. According to the Agreement, the signatory parties will comprehensively promote the development of priority areas of tourism common to the cities, develop and implement joint projects, and also promote the exchange of experience in the field of tourism and the holding of joint seminars and conferences on tourism topics.

The Department for Strategic Development and Investments presents to your attention the Strategy of cooperation and marketing communications for the promotion of the traditional culinary heritage of Rivne (hereinafter - the Strategy), developed as part of the implementation of the project "Cultural heritage of the kitchen - promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne".

Vsevolod Polishchuk, a well-known restaurant marketer, co-founder of the Galician Kitchen Club NGO, Vsevolod Polishchuk was involved in the development of the Management Strategy for Strategic Development and Investments.

Since November 2020, active work has been ongoing on the development of a strategic document, determination of the main directions of promotion and popularization of the idea of gastrotourism, ways of promoting the territorial community at the international level, the possibility of providing a new impetus for the development of HoReCa establishments and, as a result, the creation of prerequisites for the improvement of socio-economic living conditions of the community.

In close cooperation with restaurateurs, historians, cultural experts and all those interested in the development of the territorial community, an analysis of the state and prospects of culinary and gastronomic tourism in the Rivne region was carried out, the forms of popularization of the culinary heritage of Rivne were determined, and the meaning and signs of the concept of "Rivne cuisine" were formulated.

Together with partners from the city of Lublin, ideas were developed regarding cultural and professional exchanges at various levels, joint holding of festivals, which are the basis of one of the sections of the Strategy.

On May 15, 2021, during the "Matsyk" gastronomic festival in Rivne, which was attended by Rivne Mayor Oleksandr Tretyak, Rivne City Council Secretary Viktor Shakyrzyan, Rivne Regional State Administration Chairman Vitaliy Koval, an official delegation from Lublin, community representatives, the administration of strategic development and investment issues, the Strategy of Cooperation and Marketing Communications for the Promotion of Rivne's Traditional Culinary Heritage was officially presented.

And the logical conclusion of the project was the signing of the Agreement on cooperation in the field of gastronomic tourism by the deputy mayor Igor Krechkevych during the international gastronomic conference held in Lublin, which is a continuation of the close cooperation between the municipalities of Rivne and Lublin, and will be a guarantee of establishing new, promising ways of implementing joint projects in the field of marketing communications, will form the image of the territorial community as a reliable partner open to international cooperation.

We would like to thank Vsevolod Polishchuk and all those involved in the work on the Strategy for a thorough study of Rivne's culinary heritage, and the Poland-Belarus-Ukraine Cross-Border Cooperation Program 2014-2020 for the opportunity to implement it.

The tradition of preserving and popularizing culinary heritage in Lublin is much longer than in Rivne. Therefore, in the cross-border cooperation project, our partner Miasto Lublin shares its experience and inspiration with us.

The Dziedzictwo kulinarne Lubelszczyzny team has prepared a series of 10 video recipes from leading Lublin chefs, whose restaurants are united by offering authentic regional dishes. In this way, the city authorities support and popularize both culinary heritage and local establishments.

1. Jarosław Sak - chef Trybunalska City Pub.

"I am glad to be able to welcome you to the very heart of Lublin's Old Town. We are located on Rynok Street, building 4, in the Trybunalska City Pub restaurant. My name is Yaroslav Sak, and since 2013 I have been working as the chef of this restaurant. In 2013, we for the first time, won the "Place of Inspiration" award. Our menu is based on local and seasonal products. We are inspired by the cultural diversity of Lublin cuisine. Today I will prepare for you a sous vide roe loin with a salad of buckwheat porridge, king mushrooms and spinach. For the salad, more add red beets and hazelnuts."

I want to emphasize that our institution has been a "Place of Inspiration" for two years. We received this award thanks to the votes of our visitors.

As part of the project "Cultural heritage of the kitchen - promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne", which is implemented with the financial support of the European Union within the framework of the Cross-Border Cooperation Program Poland-Belarus-Ukraine 2014-2020, the NGO "Agency for Sustainable Development of the City" has developed a culinary catalog "Taste Rivne: authentic dishes and drinks".

The Agency's team, in the course of gastronomic journeys, managed to find unique dishes in different corners of the region, which have a unique recipe and are shrouded in legends, handed down by housewives from generation to generation. In cooperation with Rivne restaurants, old recipes have been reconstructed with elements of modern food presentation. Thanks to this catalog, you can now prepare green borscht with carp and mushrooms, kulish with crayfish, spelt, travatku and ask for it with oat jelly, as well as surprise your guests with the vodka of Prince Ostrozki. This catalog was created for restaurateurs who want to bring authentic local dishes to their menu, and for those who prefer gastronomic experiments in the home kitchen, where you can find interesting old recipes of local cuisine for every taste.
